Control of oak contribution is essential to achieving your desired wine style. Conventional calculations use surface area to measure oak contribution. The more accurate calculation is:
Surface Area x Penetration Rate x Time
This formula yields volume extracted, necessary to quantify pieces required for barrel equivalents.
Surface Area
Surface measurement (in2) is commonly used to compare oak extracted from barrels with alternatives. However, surface area alone is static and incomplete: contact time affects the amount of oak extracted from any surface area.
Barrel Equivalent Accuracy
Volume (in3) is the accurate measurement. Volume extracted is illustrated in the four-month snapshot at left.
